I went home for the weekend and, to my delight, found a loaf of Almond Apple Bread waiting to greet me! Now, I’ve had my fair share of apple treats- from apple coffee cake with oozing cream cheese icing, to classic apple pie and warm apple crisp, to plain old apple bread- but I had never before had the amazing experience of eating Almond Apple Bread. And I had definitely been missing out. The chunks of apple blended with the creamy smoothness of pockets of almond paste, and combined with the crunchy topping of sliced almonds, the bread created a sensational taste-tingling effect.  So if you, like me, have never experienced the amazing combination of almond and apple before, I have the recipe to fix that!


Nicholas’s Almond Apple Bread

To prepare batter, combine these ingredients into a bowl, stirring as each is added:

1.5 cups of shredded apple                                             

3 Tablespoons vanilla

1 package of almond paste                                            

.5 cup of milk

1 cup sugar                                                                     

4 eggs

1 cup brown sugar                                                          

2.5 cups of all purpose flour

1 cup vegetable oil                                                           

1 cup oatmeal

2 teaspoons baking soda                                                

1 teaspoon salt

.5 teaspoon baking powder                                              

Handful of sliced almonds

Heat oven to 350 degrees. Grease two 8” loaf pans. Pour in batter and sprinkle sliced almonds on top. Place pans in oven. Bake between 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Let cool. And then...ENJOY! (I personally enjoy melting some butter on a slice while it’s still slightly warm.)
