I have to admit; the idea of making crepes from scratch seemed a little daunting. Needless to say I soon discovered that the savory dessert that looks so fantastic on a plate, was not quite so difficult to assemble at home.

I started out by following the recipe and mixing the dry ingredients together and then adding in the eggs, butter and vanilla. Everything was coming along well, and it looked as though I was going to have some tasty crepes on my hands until I added in what seemed to be an overwhelming amount of milk. Now, I have concocted my fair share of deserts, however crepes have not been one of them, so when my batter turned into soup I was a bit taken aback. Luckily as I poured the batter in the pan and watched as it cooked, I realized that everything was going to turn out okay. Putting a lot of vegetable or olive oil was definitely a must, as it was delicate work flipping each crepe. After about 4-5 minutes of cooking, the crepes were ready for garnishing.

I chose to follow the original recipe and fill mine with fresh strawberries. Following the instructions I mixed together melted butter and brown sugar, using a fork to thoroughly mesh the two into one another. This became the thin coating that I spread on each warm patty and then covered in strawberries. After filling, I folded each crepe over and then it was time to make the homemade whipped cream.

The whipped cream was so simple and painless. Beating heavy whipping cream with a hand mixer, or wire whisk if you need your exercise, until stiff peaks form is about all it takes. Then a little sugar is added to sweeten things up and it is ready to serve. I placed a generous dollop on each of my crepes, which were then met by a very hungry stomach.

Overall this recipe was nothing short of delicious. As a novice chef, I was able to easily recreate this delectable dish but without feeling like it was too simple. The large variety and different options that you have with the recipe are great as well. Strawberries can be replaced with almost any fruit or topping, which makes it a great choice for dessert or even breakfast.

Cassandra Pnetzien is the best writer ever. These crepes sound delicious. I have never tried crepes, but just might have to after this exquisite article.
